Preheat oven to 350 degrees Fahrenheit. Scramble ten eggs in a bowl. Add chopped spinach, shredded cheese, and diced or sautéed meat. (bacon, sausage, ground turkey.)
Add salt and pepper and garlic powder.
With a ladle, spoon the mixture into two greased cupcake pans. Bake for 30-35 minutes until done.
Let cool and store egg bites in the fridge for the week to heat up and eat.
Lunches:
Peanut butter and jelly sandwich
Peanut butter and banana sandwich
Chicken salad or tuna wraps or sandwiches
Cobb salad
Pigs in a blanket (hot dogs wrapped in crescent dough with cheese slices) bake at 375 degrees farenheit for 10-15 minutes. Watch until the dough is a nice golden brown.
Lemon Tomato Noodle Soup
Ingredients:
A friend taught me how to make this dish. This is a great way to make a cheap and quick batch of homemade soup that kids love.
In a blender, blend one small jar of sun dried tomatoes with all of the included oil, 2 cups cherry tomatoes, lemon juice, and half of a large onion.
Pour avocado oil in a deep sauce pan or a regular sized pot. Start simmering Moderna tiny noodles (1 1/2 packages) abc or other in the pot. You find these in soup aisle.
Pour the tomato mixture over the noodles and add 5 cups of water. You might need more water for the soup mixture- your call. Stir and bring to a boil. Keep squeezing lemon juice into the boiling liquid. Add salt, garlic salt, garlic powder, minced onion, and pepper.
Once the noodles are cooked, ladle into soup bowls.
You may add chopped chunks of mozzarella to the top.
Snacks:

blend all ingredients together -
3 cans of chickpeas drained
olive or avocado oil, garlic powder, salt, and cumin
lots of lemon juice and grated zest of two lemons
add a bit of water if necessary
season to taste ( adding more of these flavors)
Dinners:
A crock pot is a mom's best friend...
---Crock Pot Spaghetti with Meat Sauce and Cheddar Cheese ---
Oil a crock pot (only use avocado oil or grapeseed for no trans fat at high temps)
Place a layer of browned ground beef (you will brown 2 pounds with garlic and fresh onion in a sautée pan) on the bottom. Add a layer of shredded cheddar. Place a layer of dried noodles- 1 and a half boxes of spaghetti total
Pour half a jar of spaghetti sauce over your dry noodle layer, with half a can of diced tomatoes.
Repeat layers of meat, cheese, noodles, and sauce.
Cook on low for 8 hrs. Serve with salad. This makes a lot!
---Spinach, Cream, and Turkey Bacon Crock Pot Chicken---
coconut or avocado oil
chicken breasts 4-5 or package of chicken tenders (uncooked)
6-oz fresh cubed mozzarella
1 package cream cheese cubed
salt, pepper, garlic powder, minced onion
3-4 cups fresh packed down spinach- chopped
8-10 slices bacon uncooked
1/4 cup water
Place oil in crockpot.
Add the rest of the ingredients.
Cook on low 7-8 hrs.
Shred chicken with a fork.
Serve over rice or with a toasted baguette and salad.
---Green Chicken Chili--- Serve with fresh cilantro, avacado, and tortillas in bowls.
In a crockpot, place avocado oil. Add in 3-4 large chicken breasts. Add salt, pepper, 2 small cans of diced green chiles, 1 extra large can green chile enchilada sauce, and 1 can of cream of mushroom. Add a splash of milk. Let this cook on low for 6-8 hours. Shred chicken with a fork once cooked.
Serve in bowls.
---BBQ Beef Sandwiches---
Place avocado oil in a crockpot. Add a beef chuck roast, salt, pepper, honey or agave 2 tbsp, chopped onions, and 1 bottle of bbq sauce into the pot.
Let this cook on low for 8-9 hrs preferred. Shred beef with two forks.
Place in sandwich buns and eat with beans or corn and salad.
---Tex Mex Enchiladas---
Diced canned chicken - 4 large cans or a diced rotisserie cooked
In a saute pan simmer chopped pecans or walnuts with diced onions in butter. Keep stirring. Turn heat off before it browns too much.
Add chicken to the bowl with onion/nut mixture. Add in 1 can cream mushroom soup, two small cans of diced green chiles, a 1/2 cup to 3/4 cup sour cream, milk, salt, pepper, garlic powder, cumin, and diced fresh spinach. Stir well.
Add this mixture to tortillas and roll them into enchiladas.
Grease a baking dish, add a layer of green enchilada sauce on the bottom, place tortillas closely to each other in the pan. You might need an extra small pan. Layer some green enchilada sauce on the top. Bake 375 degrees farenheit for 25-35 minutes covered in foil. Watch to make sure enchiladas don't brown.
Serve with beans or salad and chips/salsa.
---Cabbage and Ground Turkey---
Dice a whole, large green cabbage into small pieces. Saute in a large work or deep sided skillet in avacado oil. You may cover with a lid to simmer. Add salt, pepper, and (coconut aminos optional).
Brown 2 pounds ground turkey with salt and pepper in a skillet. Mix the meat with the simmered cabbage.
Serve with rolls and butter.
--- Stir Fry---
Chop the following vegetables: 1/2 large cabbage, mushrooms, baby bok choy, green onions, and 1 yellow onion. Saute these vegetables in a pan with garlic powder, garlic salt, sesame oil, and coconut aminos.
While the vegetables sautée, brown ground turkey or chopped pork belly in a pan with avocado oil.
When the vegetables are softening, place them to simmer. Add in udon noodles- (2 packages of ready to stir fry noodles.)
Add meat to the vegetable mix. Add more coconut aminos, sesame oil, and garlic powder/garlic salt. Also, add 2-3 tablespoons of honey or agave.
When the stir fry is fully cooked, serve in bowls. (Remember to stir frequently while cooking.)
--- Beef/Potato Stew---
This is a crock pot meal and great at filling little bellies... actually all bellies in the household! It is a great way to cook in winter and yummy to eat on cold days.
Place some avocado oil in the bottom of a crock pot.
Add 4 large diced potatoes (skin on) 4-5 whole carrots (diced) or you may use baby carrots, 1 /2 to 1 whole chopped onion, some chopped Roma or grape tomatoes (sliced in half) to the pot. Optional: frozen sliced peppers. Add in coconut aminos and sesame oil, some garlic powder and garlic salt.--- stir. On top of the veggies, add 1 1/2 pounds of ground beef or turkey. (You may brown and ground this before or dice the meat once cooked in the pot for a few hrs. with a spatula.)
On top of the meat, add a small layer again of garlic powder, garlic salt, sesame oil, and coconut aminos. Add 1/2 cup water.
Cook on high for 3-4 hrs and then turn to low heat for the remaining couple of hours. Stir your stew and dice any meat in the pot when switching to low heat. It's delicious!
---Chicken and Bacon Cobb Salad---
Make 10-12 hard boiled eggs.
Peel and Dice.
Cook bacon and dice.
Saute cut up chicken from a rotisriee in a skillet.
Add the chicken/bacon and sliced eggs over buttered lettuce.
Stir in prepped green peas, fresh, diced onions, green onions, shredded cheddar, and croutons.
Optional- Top each individual salad bowl with avocado slices. Ranch dressing or blue cheese dressing is best.
---Homemade Pizza---
Sourdough starter rolled out with flour on a pizza stone or pan.
Use different sauces and toppings for the following. Bake at 400 degree Farenheit for 10-12 minutes or until done.
1. Cheese-
Pizza tomato sauce
Shredded Mozzarella with extra cheese
2. Barbecue Chicken
Barbecue sauce and oil with salt, pepper, Italian seasoning
Mozzarella Cheese
Diced Onions
Diced chicken breast
Green onions or basil
---Crock Pot Beans—-
Place avacado oil in a crock pot. Add in MayoCoba or pinto beans - dried 2 bags. fill the crock pot to almost the top with water. About 3 inches above the beans.
Cook on high all night and in the am, turn the crockpot on low. At this time, add in diced ham or bacon slices. Cooked diced ham works great :) Simmer on low until noon. Drain water with a ladle. Add salt, pepper, garlic powder, and cumin.
Serve meat and beans in a bowl. Top with sour cream or chives optional.
Eat with honey cornbread and salad.
—-Old Fashioned Greens—-
Kale:
Boil kale in chicken broth or water with chicken bouillon. About 1-2 cubes only or a small spoonful. Add some salt, pepper, and a pinch of sugar.
Once boiled, pick up with a straining spoon to reserve some liquid. Store in a container and eat warm on salads or with main dishes.
Creamed Spinach:
In a Dutch oven, sauté diced onions in 2-3 tb butter. Add in 2-3 small boxes of spinach or 1 large bag of spinach in bulk. You will need to add as much spinach that fills the pot and cover. Once cooked down and wilted, keep packing more.
Once some spinach is wilted, pour heavy cream -1/2 cup into the Dutch oven . Add 2-3 tb more butter and salt, pepper.
Place lid on the dutch oven and simmer until spinach is wilted and cooked. 2-3 small boxes spinach works with a 6-7 quart dutch oven.
Serve spinach with meatloaf or chicken drumsticks that have been cooked.
