A Quiet Day... and Life

It's been one of those exhausted days. Probably semi with still recovering, though I'm pretty much back to normal. I can definitely still tell I am swollen; a normal side effect until a year. I can at times, when I bend or move in a certain position, feel the tight coils from the inside, which keep my muscular wall in place. Kind of weird... but so worth it!  I read that the muscles should heal a bit around the coils (or something like that), so the feelings shouldn't be there that much in the future. We will see- it's the internet! 

Today was a good and a normal working day, though we didn't do much.  I usually take more of a rest on Saturdays.  With my husband on a trip, and five kids, I'm reminded about all of my responsibilities.  I've done loads and piles of laundry, loads of dishes, cleaned and turned around to messes, taken out tons of trash (you know you have a big family when...) gone grocery shopping- no easy task with two littles in tow (my oldest girl was helping thank goodness), have driven up and down valley; I'm sure with kids you know the drill. 

The sweet thing is I have gotten a lot thrown away, a lot more organized, cleaners are coming (this is a blessing for me with all my daily chores to have a deep clean, regular crew) and I even made a comfort food dinner.

So, here it is...

Easy Spaghetti Carbonara.... No skimming on anything...

Boil 1 1/2 packages spaghetti (I used gluten free but semolina wheat noodles will be great)
In a sautée pan, add one whole package of classic, thick bacon (cut into pieces quickly with scissors) and diced onion, butter.  Bacon should be softer for this dish... but cooked.

In a bowl, whip 5-7 eggs and then pour in at least 1/2 cup heavy whipping cream. Add sea salt and black pepper-- lots.  Stir.  Drain hot noodles and keep in pot.  Add sauce immediately and stir. Add bacon with all drippings. Stir and salt/pepper some more. Add parmesan.  Serve with a salad and peas. 

Its creamy and delicious... affordable and in bulk for leftovers.  Well, not many in our house...


On a side note I'm dreaming of a vacation. I want to go to the Blue Ridge Mtns or the Smoky Mtns. of Tennessee. I want to take our kids to Sliding Rock in NC by the Tennessee border. It looks so fun. It has a natural, rock water slide. I really have it on my heart to get away for a break in this part of the country. I hope it happens one day. It would be an awesome vacation. Swimming, restaurants, Dollyville, waterparks, shopping, exploring.  Having fun as a family is so important. We definitely make plans more often now. Precious times and precious days.
