Summer, Family Adventures, and a Cooking Tip...

 Yay summer! We are so excited. It is a blessing to live in such a beautiful valley come summer. Mountains and trees are green and everything is beautiful. It's such a gift after the beauty and then hardness of winter. 

I think of this valley as a special, rugged place to live. Life can hit as hard as the sharp mountain tops and days can be tough, even driving or walking around with extreme weather. But then, slowly, sunny and colorful seasons come where everyone is outside, you just reminisce in God's creation, and days are slow and peaceful.

I have a gift for Jeremy this summer. We and our kids are headed on an adventure to go camping near Bear lake. It borders Idaho and Utah and it has the clearest blue lake you'll ever see. It's nicknamed the Caribbean of the West for bright blue waters. It's only half a day's drive. We plan on snorkeling, having beach days, and lots of water fun; plus exploring the small towns. 





We also have other fun camping trips planned with our extended family that we adore. Our host student comes to live with us in August and we are so excited. The girls will have a lot of fun together and get along very well. 

-My dream vacations are the Smoky Mountains in TN, back to Hawaii- maybe seeing Maui this time, and to Maine, also Ashland N,C. area. Jeremy and I have a heart to travel more with our family and we have lots of dream destinations together. His dream and mine also- Israel. Yes, we would love to go. Even though I should be scared to go to Israel, I'm not at all. As our kids get older, Jeremy and I see ourselves traveling there and staying there on trips. At first Jer dreamed of Dubai, but I'm glad we are both united and settled on visiting Israel if we go across the U.S.A. And if that ever happens lol, Israel will be the country we travel for. Not to mention, I would love to visit Netanya, they have a Christian church there that outreaches to the Jewish people. It would be amazing to visit a church like this on a trip. After a week or so though, it's pretty funny, I'm already ready to get back home. I get so excited to travel and then after a bit, I'm like "All good, ready to go home now." :) --And another fun adventure this fall, Noah's ark! We are going to the ark encounter in Kentucky with my family. We are so excited. And, I'm making Jeremy drive me 3 hrs to Adams, County Ohio. Its beautiful Amish country with shopping. He is thrilled :) But truly, I've heard the real ark dimensions are actually HUGE. It's crazy to know that God flooded the earth in the past and this man's boat was the only one saved. I am so glad for the promise of the rainbow, and still see  God's grace over His grief with sin, violence, and evil. Ultimately the cross, but the rainbow is such a beautiful sign of His promise as well. 

--Lastly my cooking tip. The key to my husband's heart is Indian food. Seriously. Its his favorite cuisine. My favorite cuisines include anything with curries,  savory sauces, rice, meats, and veggies. 

Anyways, besides my attempt gone completely wrong at making Naan bread (I might get there one day, but will happily buy it from the store) I finally got curry and tikka masaala right- after many tries. 

The key- adding two cans of coconut milk plus one can of chicken broth for the sauce with the curry paste or tikka masala paste (whichever you choose). 

The night before, you can dice fresh chicken tenderloins into cubes, plus chop up peppers, onions, and any other veggie like sweet potatoes. Add all this in a pot to boil. I cook large portions. Serve over rice. 

-One of my daughters actually said it tasted like the restaurant, so I'll take it!
